Favorite Recipes
Howdy! I've been on a strict diet (I'm working on a chapter going over why) and I've been able to try new recipes. I feel like it's advanced my cooking skills. My current favorite recipes are, Quinoa Tortillas, Sugar-free granola, and Double Chocolate Avocado Cookies! (Yes, I am obsessed with chocolate. No, I am not ashamed of it)
Quinoa Tortillas
Ingredients: 1 to 1 ratio
Quinoa Flour
Water (add more if wanted/needed)
Salt (1/2 tsp)
Baking powder (optional ) (1/2 tsp)
Oil (1 tsp)
Directions:
1) Warm skillet or pan on medium
2) Add oil to pan/skillet
3) Mix ingredients together in a bowl
4) Let mixture sit for two minutes
5) Pour mixture onto the pan/skillet
6) Flip when bubbles come to the top of the tortilla (about 30 sec to 1 minute)
Then you're done! I haven't been able to make any of my tortillas look really great like they do in pictures, but I'm going to keep trying! I've also added some sweetener/stevia and cocoa powder a couple of times to make it more like a dessert, it was so good! But a warning before you try this, quinoa has a bit of a bitter aftertaste to some people. I did't really notice this, but my sister did when she tried them. I think that it really depends on your tastebuds.
Sugar-Free Granola
Ingredients:
Almonds (Not roasted, if you want to make it more fun ^^) (1/2 cup)
Oats (1/2 to 3/4 cup)
Almond flour (1/4 cup)
Almond/soy/oat milk/water (Or any other type of milk that you like) (1-2 tbs)
Stevia (monk fruit, erythritol, or any sweetener you'd like. But preferably not sugar/honey/agave/syrup, those really aren't very good for you) (2-4 tbs)
Cinnamon (optional) (1/2 tsp)
Vanilla (1/2 tsp)
Cocoa powder (optional) (1 tbs)
Directions:
1) Preheat oven to 375 ° F / 190 ° C (or air fryer to 400 ° F / 205 ° C)
2) Add Almond Flour, vanilla, cinnamon, and sweetener (cocoa powder) to a bowl then mix
3) Add milk/water to mixture and let sit
4) (optional step) Add a few oats to the mixture
5) Put almonds on a sheet pan with a mat/baking paper in oven (for five-ten minutes) (or in air fryer for ten minutes)
6) Take almonds out of oven and place on counter
7) Take almonds off of the pan and spread the almond flour mixture on the pan (make sure it's not too hot)
8) Add oats and almonds back onto the pan
9) Stick back into oven for seven minutes (or air fryer for five minutes)
10) (If in air fryer) take out after three minutes and mix around
11) Take out of oven and your granola is made!
It might not stick together like other recipes' granola does, but I love this recipe! (I made it myself). It is so good on oatmeal, with milk (like cereal), or just for a snack. I love to add blueberries and just eat it like that... yum!
Double Chocolate Avocado Cookies
Ingredients:
Avocado (1)
Stevia (or any wanted sweetener) (1/2 cup)
Egg (1)
Vanilla (1/2 tsp)
Cocoa powder (1/2 cup)
Chocolate (chunks) (dark preferred) (2 oz/60 g)
Flour (these are my favorites to use)
*Quinoa - has a slightly bitter aftertaste (1/3 cup)
*Almond - can be mealy (1/3 cup and add a little milk/water about 1-2 tbs)
*Coconut - mealy and tastes a little like coconut (1/4 cup)
Baking soda (1/2 tsp)
Directions:
1) Preheat oven to 350° F/ 150° C
2) Add mashed avocado, sweetener, egg, and vanilla to a bowl and mix
3) In another bowl whisk cocoa powder, flour, and baking soda
4) Pour wet ingredients into dry and mix until combined
5) Stir in chocolate chunks
6) Use a spoon/ice cream scooper to put cookies on the sheet pan (with baking paper/oven mat)
7) Bake in the oven for about ten minutes
8) Take cookies out and you're done! (Let them cool before you eat, don't want to burn your tongue off ^^)
