INGREDIENTS:
Flour 350g
Sugar 150g
Butter 250g
Egg 6pieces
Mixed fruit 80g
Glazed cheery 20g
Baking powder 1table spoon
Nutmeg 1table spoon
Lemon zest half
Orange zest half
Browning (lots)
Brandy half cup
Salt pinch

METHOD:
Cream the butter and sugar together until fluffy and whitish in nature and double in size.

Gradually add in the beaten eggs and cream together,sock the mixed dried fruit with the lemon and orange zest with brandy overnight.

Pour into the the mixture and add the browning then mix well.

Gently fold into the sieved flour.

Add the glazed cherry,pour into a greased tin for approximately 1 hour.
