Basic pie pastry

2 1/2 C flour (13 oz/400 gr)

3 Tbsp sugar

1/2 tsp salt

1 C cold butter cut in cubes or you can go abstract like I did and cut it crazily (It's essential that it's cold!) 500 gr/8 oz

6-8 Tbsp cold water

You can do this with a food processor and you'll tackle this in like 5 minutes. But, I did it the old fashion way to take a gazillion pics :)

You'll need this weird pasta pie maker. I'm sure there's an actual name for it, but that's how I call it. (Or you can try to do this with two knives...but I've never understood how. LOL)

First, you mix the flour, salt and sugar:

Then, you add the butter:

And you have to start "cutting" the butter on the flour mixture:

When the batter resembles coarse crumbles, like these, you can add the water, slowly mixing it. 

Now, the water part is a bit tricky. I can't remember how many tablespoons I add with each recipe. You should add like six (at least) but if you can't mix the dough well, add a bit more. 

The dough should look like this:

Now,  can divide this dough and pack them with clingy plastic and chill for about 30 minutes. You have two packages, one for the bottom cust, and the other for the top one.
