Chicken à la King - EASY
Ingredients
· 1 Rotisserie Chicken (I remove the skin – to snack on or give to our dog. Then shred to pieces the white and dark meat with a fork and knife.) *NOTE you can use 2 CUPS cooked chicken cut into pieces too, but for me, rotisserie chicken tastes much better, and the cooking part is already done.*
· 1/4 bag of Frozen Peas (optional - but this give's your dish color and balances the taste)
· 1/4 bag of Frozen CHOPPED or DICED Onions (optional - but really provides the yummy flavor)
· 1/4 bag of Frozen SLICED Mushrooms or 1/3 cup FRESH Sliced Mushrooms (optional)
· 1/3 cup Butter
· 3 TBSP Flour
· 1 cup Milk and 1 cup Chicken Broth (I put these together in a measuring cup = 2 cups combined)
· Salt and Pepper to taste
Directions
1. MELT Butter in a large skillet over MEDIUM heat.
2. SAUTE Onions until translucent.
3. ADD Salt and Pepper and FLOUR. Mix until flour is blended well.
4. GRADUALLY add Milk and Chicken broth mixture. Stirring as you add.
5. ADD Chicken, peas, and mushrooms, stir occasionally.
6. ONCE bubbly and hot, remove from heat and let it sit for a few minutes before serving.
TIP: I serve this dish on top of rice. But my mom serves it on top of mashed potatoes. You could also use pasta noodles. Or for those carb conscious folks, cauliflower rice works too.
