Chapter 8. White.


It was one of those days when we were picking ripening grapes and I had plans for the harvest.

I was slowly picking grapes, today I already had twice as many people helping me. Sometimes even parents of teenagers joined me and helped me. These parents used to avoid my fields and twist their fingers around their temples when they saw what I was growing. The younger ones used to run to help me secretly from their parents, but now they pick grapes together.

My little sister divided the share she got from me for helping me among all those who helped us with the grape picking. To be honest, my little sister could get along well with people, always found a common language with them, never offended the workers who worked in his field.

My father wants to pass the fields to me in the future to continue his work, but I think that my little sister deserves it more. She learned very quickly how to work the vines and how to remove the thorns. Aiwa never even once used purification spells when removing thorns, but I stabbed myself with them several times. My sister made it very easy to teach my friends how to care for and harvest grapes. Each time I realized that I could not have done it without her.

As I found out later, the grapes were appreciated by people. At first I even thought there would be attempts to steal grapes, but the people of our and neighboring villages were honest and united.

I did not see grapes on sale at the stalls, apparently the people considered them too tasty and valuable to sell, since sweet products, as I said, in this world were hard to find.

From time to time I made experiments with grapes in the test fields. To accelerate the growth and breeding of new species, I also studied other varieties of this plant that I found while exploring the wild forest. So I developed a couple of grapes with different color and taste.

But as before, when I accelerated the growth with magic, I caused the plant to grow uncontrollably. Apparently, because I was still not good at controlling mana flows. 

- Hello, the princess approached me with Bella and Tilin.

- Hello, what brings your highness to us?

- We want to help you pick grapes.

- But we can manage, and it's not an easy job. 

- Is it? And we were so eager to help you.

The princess and Bella's heads drooped, and Tilin looked through, as usual. 

- All right, but don't say I didn't warn you.

- We promise!

After giving them aprons and 2 baskets each, we headed out to pick grapes. 

- Look, first we inspect the grapes for ripeness. If the bunch is not ripe, we leave it to ripen. If you find a rotten bunch or with diseased berries, call me or the person responsible for finding diseased berries. It is necessary to study what the berries are sick and how to deal with it. If the bunch is ripe and without diseased berries, cut the bunch and put it in the basket. When the basket is full, put it on the aisle, and the person responsible for collecting the baskets will take them to the position on a special cart and bring the empty basket to you.

- We got it.

At first they called me for all sorts of trifling things, but then they figured it out and only called me in difficult situations.

Tilin was surprisingly quick and the speed of her grape picking was enviable. After spending some more time in the field, I headed for the barn. On the far side of the barn, I decided to use magic to create a large cellar underground, 

where I could store grapes and make white wine, since the fermentation temperature was lower than for red wines.

The process of making white wines was as follows: First we grind all the grapes, just like in the past. A couple of days before that I prepared a starter from the grapes I had picked in the wild woods, which had been turned into raisins. We pour the obtained pulp and juice into barrels and put the starter, leaving to ferment in a dark place at a temperature of 15 to 20 degrees Celsius for 10 -12 hours.

Having done all this work, as well as putting the grapes away for long term storage in the cellar I created.

The evening came. Going outside, I saw the princess, Bella, Tilin and my sister sitting on a bench nearby.

- How was it?

- I liked it, I'm not even tired," the princess said smiling.

- I'm very tired," Bella mumbled with a pained look on her face.

- ...... - Tilin remained silent.

- Thank you so much for your help! 

- And even me bro?

-You too! 

- Brother, you're not sick, maybe something fell on your head? 

- If you're gonna be sarcastic, that's the last compliment I'm gonna give you! 

- Okay, I'll shut up!

Everyone's smiling. I brought everyone chilled grape juice and we watched the sunset together.

- If you'd like to attend tomorrow, I'll be separating the pulp from the must as well. 

- How exciting! We'd love to come," said the princess.

Bella, smiling, nodded along with Tilin.

We headed home.

Everyone was outside the barn for the morning, including my little sister and a group of helpers. 

I had a press prepared to press the pulp. A sieve and barrels into which the wort would be poured. First of all, I decided to press the must for white wine, so that the wine would not get a red color. Putting the must into the press, I started the process of separating the liquid part from the solid part. Thanks to the magic crystals, I didn't have to waste any energy.

- The flavor of this juice was interesting. It has become quite different from when we first processed the grapes. Many of the notes are reminiscent of the pleasant aroma of flowers, but there are some unfamiliar flavor notes to me as well. 

This was to be expected, because in this world the body is used to existing smells and correlates and matches the smell of wine to the smell of this world, plus so far there are fermentation aromas and the aroma of alcohol.

- This is not yet the aroma that will be at the end, the full bouquet of aromas the wine will get only when it stands and rests after fermentation. But the fact that you felt pleasant notes is a good sign. It means we are moving in the right direction.

The princess stood with a surprised face while Bella talked to me about the aromas during the pressing process. After we finished pressing and filtering the white wine through the sieve, we rinsed the device and began pressing the pulp of the red wine I had supplied. To be honest, it didn't have a red color, but a distinct lilac color, something reminiscent of lilac blossoms. I was amazed.

- Can I taste it?

- You can taste it, princess, but then you'll lose all those impressions of taste and aroma when it's ripe. 

- Wouldn't you? Eh, I can't wait for the day when I finally taste wine! 

- I'm looking forward to that day when you taste wine too!

After the talk, we continued working on squeezing and filtering the wort. Toward evening, we finally finished the job by arranging the barrels in their places and putting the water seal in place*.

*(Author's note: The seal: Tubes sticking out of the barrel placed in a watery environment to observe the fermentation process and to prevent the wine from becoming contaminated with pathogenic bacteria).

Now we had to wait for the wine to ferment. And as it had become a tradition for us, we sat on a bench and watched the sunset, drinking grape juice. I looked at the princess, Bella, Tilin, and my little sister. They were sitting with a smile watching the sunset. 

I wonder what their thoughts were right now? Probably they were thinking about the work they had done, or maybe the future, or the taste of the wine they would taste when the time came. One could only guess at their thoughts.

The next day I headed into the village to the local potter. I had a very large order for him, one that I would spend counting all my savings on. 

Bella joined me, as the princess had decided to stay at the manor, apparently exhausted from those two days.

- Where are we going, Will?

Our interactions with Bella were already field friendly, but I still sometimes panicked when she started talking to me. 

- To the potter and the carpenter.

- Why? You probably need it for your wine project, don't you?

- You're absolutely right. I want to order a large number of clay bottles in the shape I want from the drawing I drew. I also want to order stoppers to cork these bottles.

Bottles existed in this world, but most often they had wide necks and looked something like decanters. They were usually used for storing liquids, milk or oil, but I need a bottle with a thin neck.

- I understand you want to pour the wine into these bottles and cork them?

- Yes, that way it can keep for a long time and you can ship them long distances. Then it will retain its flavor and aroma.

- Even without using magic, it can be transported long distances?

- Yes.

Fish, vegetables were transported long distances in this world, but the transportation always involved a person well versed in freezing magic to keep the temperature low during transportation so that nothing would spoil. And that took a lot of energy and mana.

They also used magic crystals that exuded cold, but they were very expensive and charging them with mana wasn't cheap at all.  I used one of these crystals in the cellar I created to maintain a certain temperature. It was not difficult for me to charge the crystal with manna. 

After making all the orders and leaving the blueprint, Bella and I decided to take a long walk to the estate. We walked the whole way talking about nature, about flowers (about which she knew a lot and promised to send me a book describing flowers and their properties), but for some reason she was sad. 

- Is something wrong?

- We are leaving tomorrow to arrive in time for the capital.

- You're leaving already? How quickly time has flown by...

- I'm upset too. I usually don't socialize much, and it was a pleasure to spend time in your village and especially with you, Will .....

I got embarrassed and felt the blood rush to my face... Okay... The important thing is not to have a stroke.

- ......you are a very good friend and conversationalist you are fun to be with and I learned a lot! 

Friend... Conversationalist... the blood had completely receded from my face, now it felt like I had no blood in me at all.

- Me neither. How about we keep in touch through letters?

In this world, there was a semblance of a post office. Ordinary letters to any part of the country reached very quickly. It was something like pigeon mail, but here they didn't use pigeons, but a ghostly bird that used a special ability to speed up in the air and disappear in one place and reappear in another.

- Thank you," Bella said with a kind smile, looking at me.

- Thank you," I mumbled a little more clearly.

- Let's go," Bella grabbed my hand and pulled me into the daisy field. 

The girl ran and twirled among the daisies, she was like this flower. After a while of running around, we collapsed on the ground and looked up at the clouds, 

- I envy you, Will. You are surrounded by such beauty, and the princess and I live in the capital, where such beauty can't be found, or in other cities, where we undergo training. 

- To be honest, I never noticed this beauty, I was always busy with something. Then reading, then working in the field, then on my project. It wasn't until you and the princess came to visit us that I started to notice this beauty. But now for your next visit, I will try to find more places we can admire. 

- Now I'm looking forward to two things: the wine, and the places you'll find! 

We lay there for a while longer and watched the clouds float by. Now I was glad that I was born in this very world.

The next day my whole family saw Princess, Bella, and Tilin off on their journey.

- Have a good trip, and don't forget, you are invited to the wedding of our eldest daughter Rina.

- We'll be there for sure!

- If you're going to be late, let us know, we'll postpone the wedding until you arrive," said Daddy with a proud grin.

We all laughed.
