Strength is just sheer muscle strength and bone/tissue density.

Dexterity is hand-eye coordination and one's ability to use complex tools or movements effectively.

Agility is speed and balance, as well as flexibility. Improves dodging and stuff.

Constitution increases lifespan by a small amount, improves your immunity to disease and poisons, and directly increases your 'HP'.

Intelligence improves your ability to remember and comprehend things, as well as your affinity for magic and total MP.

Wisdom improves mana regeneration, senses, and problem solving skills.

Charisma improves your physical appearance based on your own ideals of beauty, and your social skills.

Luck decreases chances of getting bad Karma while increasing chances for good Karma- based on the number you have.

Faith determines your alignment to God and evil, and decides how effective your prayers or demon rituals are- also increases your ability to be affected by celestial beings.

Status screen: Minimum of 10 in each stat, unless a curse is involved. Humans reach 10 by the time they are 16 and only then are able to reach level two and improve. Other races reach between 20 and 50 as their base stats depending on their lifespans, Kitsune and Elves reaching 50 each by age 16. This is a natural growth and increase from childhood to adulthood, and does not ever occur in the same way again. 

Your actions also determine your stats, exercise increasing CON, STR, and AGI, practice improving STR, AGI, and DEX, study improving INT, WIS, and DEX, and religious activeness improving FTH. Gambling and other luck-related games can either improve or decrease your LUCK depending on whether you win or not.

I only recently decided all of this, and the story will become more consistent to this from now on. Please forgive any inconsistencies that are noticed from earlier up to this point. Eventually i'll go back and retcon it, but until then... please forgive. :3
