Jean was the first to notice this.

Jean is also the one to calm him down when this happens.

He holds Armin until he calms down and continues to hold him after because he's afraid Armin might hurt someone or even himself.

Mikasa was the next one to find out when Jean told her.

She's always cautious of Armin with sharp objects.

Mikasa told Eren about it and he talked to Armin the whole day and slept with him that night(NOT THAT WAY YOU DIRTIED MINDED PERVS)to comfort him.
