chickpea curry (vegan)
I found this recently and it is BOMB af. I love spicy food and chickpeas (and curry) so this is great 10/10 recommend
Ingredients:
1 onion finely chopped
2 garlic cloves crushed
1 tbsp oil
1 tsp chili powder
1/2 tsp salt
1 pinch black pepper
1 tsp ground tumeric
1 tsp smoked paprika
1 tbsp ground coriander
1 tbsp ground cumin
880g chickpeas
880g Indian style tomatoes
1 tsp garam masala
1 small tin coconut milk
Method:
- Heat oil in pan
- Add onion and garlic, saute until onion is transparent, stirring constantly
- Add chili powder, salt, turmeric, paprika, cumin and coriander and cook for 2-3 mins
- Add chickpeas and undrained tomatoes, stir until combined. Simmer, covered, over low heat for 20 mins, stirring occasionally.
- Add garam masala and coconut milk
- Simmer for another 10 mins
